I run Koostop salmon brake pads on my cantilevers. I like the direct-pull V-Brake type for its mechanical advantage, but honestly I prefer the older low profile cantilevers when set up well. If I had disk brakes, I'd want mechanical vs hydraulic. Disk brakes carry more weight, and require stiffer forks and frames.
